The name says it all: from older vineyards. Slightly firmer than the "regular", but not necessarily tastier because that remains a matter of personal taste. That is why I am in favor of testing, live or via test boxes.

Domaine Colbois
It is equidistant, about 12 kilometers, from Auxerre and Chablis, so in the outer regions of what may still be called Chablis. Place is called Chitry-les-fort. They maintain the vineyards by hand so that pesticides do not have to be used. And the grape vine is given air by heavy pruning, which started immediately after sprouting in early spring. As a result, the yield is limited, but the quality is improved.
The history of the vineyards starts around 1900. Until 1968 they sold their wine to the trade, but since then they have been bottling themselves. Vineyards are bought each time, but also through a marriage of 2 winegrowers, I think, and that has resulted in a property of around 20 hectares.
Chablis
Chablis is part of Burgundy and has traditionally been called the golden gate of Burgundy. The river that flows through this area is the Serein and the wines are often called 'oyster water' because of the calcareous subsoil, the former seabed.
